Alaska Halibut Chowder Recipe
- 2 lb halibut thawed if necessary
- 1/2 c. finely-minced onions
- 1/2 c. finely-minced green peppers
- 1/2 c. finely-minced celery
- 1/2 c. finely-minced carrots
- 6 Tbsp. butter or possibly margarine divided
- 3 c. chicken broth
- 3/4 tsp salt
- 1/2 tsp freshly-grnd white pepper
- 2 c. lowfat milk
- 3 Tbsp. flour
- 21/2 c. shredded sharp Cheddar cheese
- 1 Tbsp. chopped parsley
- Remove skin and bones from halibut; cut into bite-sized pcs.
- Saute/fry vegetables in 3 Tbsp.
- butter.
- Add in halibut, chicken broth, salt and pepper.
- Simmer, covered for 5 min.
- Add in lowfat milk and heat gently.
- Combine remaining 3 Tbsp.
- butter with flour and add in to chowder.
- Cook and stir till slightly thickened.
- Add in cheese; cook and stir over low heat till cheese melts.
- Sprinkle with parsley.
- This recipe yields 6 to 8 servings.
