Grilled Cheddar Tacos al Pastor

  1. Blend first 7 ingredients and 1/2 cup pineapple in blender until smooth.
  2. Pour over steaks in shallow glass dish; turn to coat both sides of each steak.
  3. Refrigerate 30 min.
  4. to marinate, turning after 15 min.
  5. Heat grill to medium-high heat.
  6. Remove meat from marinade; discard marinade.
  7. Grill steaks 3 to 4 min.
  8. or until done (160F), turning once.
  9. Cut into thin slices; keep warm.
  10. Reduce grill to low heat.
  11. Place tortillas on grill grate; top with cheese.
  12. Grill 1 min.
  13. or until cheese is melted.
  14. Transfer to plates; top with meat, onions, cilantro and remaining pineapple.
  15. Fold in half.
  16. Serve with lime wedges.
