Western Cheese Sauce Recipe
- 2 tbsp. bacon fat
- 3 tbsp. flour
- 1/8 teaspoon dry mustard
- 1 1/2 c. lowfat milk
- 1/2 c. diced sharp Cheddar
- Salt
- Warm pepper sauce
- Worcestershire
- 1/4 c. minced green onions with tops
- In saucepan, blend bacon fat, flour and mustard.
- Gradually stir in lowfat milk, and cook, stirring, till thickened.
- Add in cheese and stir till smooth.
- Season to taste with salt, warm pepper sauce and Worcestershire.
- Remove from heat and stir in green onion.
- Makes about 1 3/4 c..
