Gingered Chicken Stir Fry

  1. Cut chicken into strips.
  2. Drain oranges and reserve 1/2 cup juice.
  3. Cook ginger in hot oil 30 seconds.
  4. Add chicken and stir fry about 3 minutes.
  5. Add snow peas, reserved juice and stir fry sauce.
  6. Heat to boiling, stirring.
  7. Reduce heat, cover and cook 2 minutes.
  8. Top with orange sections.
  9. Serve over rice if desired.
