Sausage and Peppers
- 1 package 6 Hot Italian Sausage Links
- 1 whole Large Onion
- 4 whole Bell Peppers, Any Color
- 1 teaspoon Kosher Salt
- 1 teaspoon Fresh Pepper
- 1/4 cups Fresh Parmesan Cheese
- Begin by frying the sausage (hot or sweet or both) in a deep sided frying pan.
- Fry them over medium heat for about 10 minutes til cooked through.
- Set aside on a plate.
- In the meantime, slice the peppers and onions into long strips (like two coffee stirrers put together).
- Add the peppers and onions to the UNcleaned sausage pan and cook over medium-high heat for 8-10 minutes or so until they brown on the edges and are starting to soften.
- Meanwhile slice the sausage diagonally about the thickness of 3 quarters (the coins).
- Turn the heat down to medium-low, add the sausage in with the peppers and onions, add the salt and pepper and let cook (covered) on the stove top for about 20 minutes or so.
- Finally add that lovely Parmesan cheese and allow it to cook for another 5 minutes.
- Serve with buttery rice and homemade garlic bread!
