Danish Red Cabbage
- 1 md. head red cabbage, finely cut
- sliced
- 2 tart green apples, peeled and cut up
- 2 tbsp. butter
- 1 md. onion, sliced
- 1 qt. water
- 1/2 cup red wine vinegar
- 1/2 cup sugar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 cloves garlic, minced
- 1 bay leaf
- 1/2 lemon, juice of
- Heat butter in large saucepan; saute onion and apples for 3 to 4 minutes.
- Add water, vinegar and seasonings; bring to a boil and add cabbage.
- Cover and simmer for 45 minutes, or until tender.
- Use a slotted spoon to serve.
