Curried Deer
- 2 1/2 pounds deer lean
- 1 large onions chopped
- 3 cloves garlic crushed
- 3 teaspoons curry powder
- 6 ounces tomato paste
- 2 each bay leaves
- 1/4 teaspoon cloves powder
- 2 cups beef stock prefer veal stock if possible
- 4 each carrots diced
- 1/2 cup raisins, seedless
- 1 cup grapes, seedless
- 1 each apples diced
- 1 teaspoon lemon juice
- 1 x salt and black pepper to taste
- Cut meat into 2 to 3 centimeter cubes.
- Lightly brown meat, onion and garlic in large, oiled skillet.
- Add curry powder and tomato paste.
- Mix well.
- Add beef stock and mix in rest of ingredients.
- Simmer for 1 1/2 hrs, covered.
- Almost any part of the deer may be used.
- Be sure to trim off all the fat and sincew.
