Puff Pastry Breakfast Bundle

  1. Whisk 3 eggs, salt and pepper together in bowl.
  2. Melt butter in 10-inch nonstick skillet over medium heat, swirling pan to coat bottom evenly with butter.
  3. Pour egg mixture into skillet.
  4. Cook over medium heat 2-3 minutes, gently lifting portions with spatula to allow uncooked portions to flow underneath, until eggs are almost set.
  5. Remove pan from heat; stir in parsley.
  6. Remove eggs to large plate.
  7. Cover; refrigerate until cool.
  8. Unfold puff pastry on lightly floured surface.
  9. Beat remaining egg with fork in bowl; brush egg over pastry.
  10. Refrigerate remaining beaten egg.
  11. Place scrambled eggs onto lower half of pastry, 1/2 inch from edges.
  12. Top with spinach leaves, cheese slices and ham slices.
  13. Fold top half of pastry over filling; press down firmly on edges.
  14. Crimp edges with fork to seal.
  15. Place filled pastry onto ungreased baking sheet.
  16. Cover with plastic food wrap; refrigerate 15 minutes.
  17. Heat oven to 400F.
  18. Brush top of pastry lightly with reserved beaten egg.
  19. Bake 25-30 minutes or until golden brown.
  20. Cool 5 minutes before cutting and serving.
