Doctor Bird Cake(A.K.A. Fiesta Cake)
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 2 c. sugar
- 1 tsp. salt
- 1 1/2 c. cooking oil
- 1 (8 oz.) can crushed pineapple with juice
- 1 1/2 tsp. vanilla
- 3 eggs
- 2 c. bananas, diced
- 1 c. chopped walnuts (for Fiesta Cake)
- Preheat oven to 350u0b0.
- Grease tube cake or Bundt pan.
- Sift together dry ingredients.
- Add pineapple with juice, oil, vanilla, eggs and bananas.
- Mix until blended, but do not beat.
- Pour batter into prepared pan.
- Bake 1 hour and 20 minutes.
- Cake will crack slightly on top.
- Cool in pan on rack.
- This cake will remain moist and fresh for some time.
- You can also use a 9 x 12-inch pan, but adjust baking time (start checking at 45 minutes).
