Spicy Bulgur Salad

  1. In a medium bowl, pour the boiling water over the bulgur.
  2. Cover the bowl with plastic wrap and let sit for 15 minutes or until all the liquid has been absorbed.
  3. In a large bowl combine the remaining ingredients and toss together.
  4. Season with salt and pepper.
  5. Using a fork, fluff the bulgur wheat and stir into the vegetable mixture.
  6. Taste and season again.
  7. Serve at room temperature
