Pol Martin-Far Breton
- 4 large eggs
- 12 cup granulated sugar
- 1 cup all-purpose flour
- 3 tablespoons rum
- 14 cup marmalade
- 12 cup sultana raisin
- 2 cups milk
- 1 pinch salt
- icing sugar
- preheat oven to 350*F.
- butter a 1 3/4-inch deep baking dish, 11 3/4 x 7 1/2 inch (30 x 19 cm) in size.
- place eggs and sugar in bowl, beat together.
- add flour and salt, beat to incorporate.
- add rum, marmalade and raisins, beat well.
- pour in milk and beat to incorporate.
- pour batter into baking dish and bake for 50 to 55 minutes or until golden brown.
- let cool in baking dish.
- cut into squares, and sprinkle with icing sugar.
- serve with maple syrup if desired.
