Pol Martin-Far Breton

  1. preheat oven to 350*F.
  2. butter a 1 3/4-inch deep baking dish, 11 3/4 x 7 1/2 inch (30 x 19 cm) in size.
  3. place eggs and sugar in bowl, beat together.
  4. add flour and salt, beat to incorporate.
  5. add rum, marmalade and raisins, beat well.
  6. pour in milk and beat to incorporate.
  7. pour batter into baking dish and bake for 50 to 55 minutes or until golden brown.
  8. let cool in baking dish.
  9. cut into squares, and sprinkle with icing sugar.
  10. serve with maple syrup if desired.
