Plum Worcestershire sauce
- 3 lb of plums
- 2 tbsp of salt
- 3 lb of white sugar
- 2 lb of brown sugar
- 1 oz of all spice
- 1 oz of cloves
- 1/4 oz cayenne pepper
- 1/2 oz of ground ginger
- 2 tbsp of white or black pepper
- 6 pints of brown vinegar
- 3 quart of treacle
- round off ingredients
- Boil all ingredients till stones leave fruit.
- Strain ingredients.
- Reboil for 1 hour
- Leave to cool
- Bottle when cool
- Makes approximately 5 Quarts
