Bolar Roast Recipe
- 1 x Bolar roast, (2 kg)
- 2 x Cloves garlic, (optional) Coarsely cracked black pepper Little cooking salt
- Preheat oven to warm.
- Cut little incisions in the beef with a small pointed knife and insert slivers of garlic.
- Place the beef into a baking dish, fat side up.
- Sprinkle generously with pepper and salt.
- Reduce oven to moderately warm.
- Bake beef for 1 1/2-2 hrs - it's best not to overcook.
- I find 1 3/4 hrs always seems to be just about right, perfectly cooked and deliciously moist and pink in the centre (1 1/2 hrs for medium rare and 2 hrs for well done).
- Cooking times will vary with the size of the roast.
- Stand for 15 min before carving.
- Serves about 10-12 for a main meal or possibly 20 for supper with crusty breads.
