Red Beans And Rice

  1. Sort and wash beans.
  2. Place in a 6-quart Dutch oven.
  3. Cover with water 2-inches above beans.
  4. Let soak overnight.
  5. Drain beans.
  6. Add 4 quarts water. Bring to a boil.
  7. Reduce heat to medium.
  8. Cook, uncovered, 1 1/2 hours, stirring beans occasionally.
