Chicken `N Chiles Recipe
- 1/4 c. flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 teaspoon chili pwdr
- 3 pound chicken pcs
- 2 tbsp. butter
- 1/4 pound sliced fresh mushrooms
- 1 can cream of mushroom soup
- 2/3 c. undiluted evaporated lowfat milk
- 1/2 c. (4 ounce. can) diced green chiles
- Combine flour, salt, pepper and chili pwdr.
- Coat chicken with flour mix.
- Heat butter in skillet and fry chicken on one side till browned; turn chicken.
- Add in mushrooms and continue cooking other side till chicken is well browned.
- Combine soup, evaporated lowfat milk, green chiles and spoon over chicken.
- Cover; reduce heat and simmer 40 min or possibly till chicken is tender.
- Serve with warm cooked rice.
