Quinoa Fried Rice
- 3 cups cooked quinoa (follow package directions)
- 1 tablespoon garlic, minced
- 12 sweet onion, finely diced
- 1 red pepper, seeded and diced
- 2 large carrots, peeled and diced
- 1 cup sugar snap pea
- 1 cup corn
- 1 cup frozen peas
- 4 scallions, finely chopped
- 2 tablespoons low sodium soy sauce
- 2 teaspoons sesame oil
- 2 large eggs
- black pepper, to taste
- olive oil flavored cooking spray
- In a non-stick wok, spray the oil and add the eggs and pepper and scramble for a couple of minutes or until done, then set aside.
- Spray a bit more oil, then add the onions, scallions and garlic and saute about 2 minutes.
- Add the peppers, carrots, snap peas, corn, peas and saute until the vegetables are tender (approx.
- 5 minutes).
- Stir in the cooked quinoa, sesame oil and soy sauce and mix for several minutes.
- Add the scrambled eggs and adjust the if needed to taste, stirring for another minute.
- Serve with protein of choice.
