Easy Versatile Slow Cooker Chili
- 1 lb stewing beef
- 1 (8 ounce) jar salsa
- 1 (20 ounce) can red beans
- 1 (28 ounce) can diced tomatoes
- 1 (4 ounce) jar roasted red peppers
- 1 tablespoon chili powder
- 1 small onion, diced
- 1 cup shredded cheddar cheese
- 1 (6 ounce) package goldfish crackers
- At bedtime add one jar of your favorite salsa (mild, medium or Hot) to the stew beef.
- Cook on low overnight.
- In the morning Stir the mixture.
- Add the beans, diced tomatoes, roasted red peppers and chili powder.
- Add water if you like a thinner chili.
- Cook on low all day.
- To serve, top with onion, cheese and goldfish crackers.
- I have used chicken breast instead of beef.
- It needs to be shredded in the morning.
