Baked meatless tacos (with fresh salsa)
- 4 large Flour Tortillas
- 1 can Black Beans, drained but not rinsed
- 2 large cloves Garlic, chopped
- 16 oz. Ricotta Cheese
- 1/3 cup grated Parmesan Cheese
- 2 large ripe Tomatoes, diced
- 1 med. Sweet Onion diced
- 1 large clove Garlic, chopped fine
- 2 Jalapeno peppers, minced
- 1 tsp. dried Cilantro
- 1 tsp. dried Oregano
- 1 pinch Salt
- 1 tbs. Lemon juice
- Mix your salsa and refrigerate at least 1 hour.
- Mash the beans with the garlic.
- Mix the cheeses.
- Place 1/4 of beans on half tortilla, top with 1/4 of cheese mix.
- Spread to edge, fold over.
- Repeat.
- Place filled tortillas on greased cookie sheet.
- Bake at 350 for approx.
- 25 minutes or until slightly browned.
- Serve with salsa.
