Crispy Dijon Chicken

  1. In a shallow bowl, combine yogurt, herbs, lemon juice, chile powder and mustard.
  2. In another bowl, combine the cornflake crumbs and Parmesan cheese.
  3. Roll the the chicken in yogurt mixture, then in crumb mixture.
  4. Place in a greased 8-inch square baking pan.
  5. Bake, uncovered, at 350 F for 35-45 minutes or until juices run clear.
  6. NOTE: This is good for boneless breasts as well but you must reduce the cooking time.
