Chocolate Ganache

  1. Preheat oven to 350 degrees F. Butter 12 (4-ounce) ramekins.
  2. Melt chocolate and butter in double boiler, stirring gently.
  3. Add sugar.
  4. Remove from heat and keep warm.
  5. In a large bowl beat eggs and yolks until volume is doubled.
  6. Fold in flour gently until well incorporated.
  7. Fold 1/4 of warm chocolate mixture with egg mixture, to temper.
  8. Combine mixtures by folding gently.
  9. Fill ramekins 2/3 full.
  10. Bake for 4 to 6 minutes.
