Lobster Au Gratin
- 1 lb. cooked lobster meat
- 3/4 cup sharp cheddar cheese, shredded
- 1 tbsp. pimento, chopped
- 1 tbsp. onion, grated
- 2 tbsp. celery, diced
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 1 tsp. Worcestershire sauce
- 1 cup whole milk
- 1 cup heavy cream
- 1/4 cup flour
- 4 tbsp. butter
- Preheat your oven to 350F.
- Butter or spray a 6 cup casserole dish.
- In a sauce pan melt the butter over medium heat.
- Whisk in the flour and cook for about 2-3 minutes, stirring constantly to make sure that the flour does not brown.
- Remove from heat and slowly whisk in the cream and milk.
- Stir in the salt, pepper, celery, onion, pimento and Worcestershire sauce.
- Add 1/2 a cup of the cheese and the lobster meat and stir to blend.
- Pour the mixture into the prepared casserole dish and top it off with the 1/4 cup of cheese that is left.
- Put it in the middle of the preheated oven until the cheese is lightly browned about 20 minutes.
