Turkey and brown rice taco filling
- 1 lb ground turkey
- 1 cup brown rice, prepared according to package directions
- 1 small onion diced
- 1 small green bell pepper diced
- 1/4 cup diced pickled jalepenos
- 1/2 cup jarred chunky salsa. your favorite
- 1 pepper and adobo seasoning to taste
- in a non stick skillet, saute the onion, peppers,and jalepenos until softened.
- Add ground turkey and cook until no longer pink crumbling it as it cooks.
- once its browned, add pepper and adobo.
- i added about 1/2 teaspoon for each.
- stir in the seasonings well and add the salsa and brown rice.
- stir until combined and let it cook until the pan looks somewhat dry.
- remove from heat and serve as a taco, burrito, enchilada, or tostada filling.
- i have also used this as a filling for lettuce wraps.
- servewith cheese, sour cream, extra salsa and hot sauce.
