Apple Red Cabbage Recipe
- 2 1/2 lb head red cabbage
- 2 med onion
- 1/2 c. butter
- 1/4 c. sugar
- 3 med minced apple
- 1/3 c. red wine vinegar
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp grnd ginger
- 3 x cloves
- 1/2 c. raisins
- 1.Cut the cabbage in half lengthwise and shred into thin strands.
- Throw away core.
- Peel and chop onion fine.
- 2.
- Heat butter or possibly margarine in a 3-qut.
- casserole or possibly browning dish.
- 3.
- Add in onions and heat, stirring often till yellowed, 2 min.
- 4.
- Add in sugar and stir till it begins to caramelize, 2-3 min.
- 5.
- Add in cabbage, apple, vinegar, salt pepper, ginger and cloves.
- 6.
- Cover and cook at FULL POWER 5 min.
- 7.
- Add in raisins and cook at FULL POWER till cabbage is crisp-tender, apples are cooked through and juices are reduced, 1-2 min.
- Microwave time: 10-12 min Conventional range time: 35 min
