Smoked Salmon and Caramelized Onion Dip
- 2 Tablespoons Butter, For Caramelizing Onion
- 1 whole Onion, Peeled And Thinly Sliced (I Used Walla Walla Onion)
- 1- 1/2 cup Gouda, Shredded
- 8 ounces, weight Cream Cheese, Softened
- 3/4 cups Mayonnaise
- 1/4 teaspoons Cayenne Pepper
- 3 Tablespoons Chives, Minced
- 1 Tablespoon Parlsey
- 1 clove Garlic, Minced
- 6 ounces, weight Smoked Salmon, Flaked (not Lox)
- Preheat oven to 350 F.
- In a skillet over medium high heat, melt butter.
- Once butter starts to bubble add in thinly sliced onion and stir.
- Cook onion, stirring occasionally until it reduces and becomes golden brown and soft.
- Remove from skillet and allow to cool slightly.
- In a large bowl mix together the shredded Gouda, cream cheese and mayonnaise until smooth and combined.
- Mix in pepper, herbs and garlic.
- Stir in caramelized onion and flaked smoked salmon.
- Spoon into an oven safe dish (I used a small gratin dish) and bake for 25-30 minutes, or until golden and bubbling on top.
- Serve with crackers, chips or chunks of bread.
