String Beans With Garlic

  1. Bring 2 cups salted water to a boil in a saucepan.
  2. Add the beans, bring the water back to a boil and simmer 6 to 8 minutes.
  3. The beans should be crisply tender.
  4. Do not overcook.
  5. Drain.
  6. Place the oil and butter in the same saucepan.
  7. Add the garlic and cook briefly.
  8. The garlic should remain white.
  9. Add the beans and chives, and salt and pepper to taste.
  10. Toss to blend.
