Dijon-Gazpacho Salad Wrap

  1. Mix dressing and mustard until well blended.
  2. Toss cucumbers, tomatoes and avocadoes in large bowl.
  3. Add dressing mixture; mix lightly.
  4. For each serving: Place 1 lettuce leaf on bottom half of tortilla; top with 1 cup of the vegetable mixture.
  5. Fold in opposite sides of tortilla to center; roll up tightly from bottom.
  6. Cut diagonally in half to serve.
