Italian Wild Rice and Barley Salad
- 2 qt. cooked wild rice
- 1 qt. cooked barley
- 2 cups KRAFT Golden Italian Dressing
- 2 cups canned artichoke hearts, drained, quartered
- 2 cups grape tomatoes, cut in half King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups eggplant, sliced, grilled and cut into medium dice Safeway 1 ea For $1.28 thru 02/09
- 1-1/3 cups canned chickpeas (garbanzo beans), drained
- 1-1/3 cups seedless cucumbers, peeled, small dice
- 1-1/3 cups fresh green beans, blanched, cut into 1/2-inch pieces
- 1-1/3 cups red onions, thinly sliced
- 1 cup roasted yellow peppers, chopped Target 1 pkg For $2.99 thru 02/06
- 1 cup pitted Kalamata olives, chopped
- 1 cup fresh basil, chiffonade
- 1 cup Italian parsley, chopped
- to taste salt and black pepper
- Combine all ingredients.
- Refrigerate several hours or until chilled.
