Vickys Quick Microwave Banana Cake
- 100 grams sunflower spread / butter
- 100 grams sugar, white or brown
- 2 medium over ripe bananas, well mashed
- 3 tbsp milk of choice - gluten free flour will need a little extra
- 100 grams plain / gluten-free flour
- 2 tsp ground cinnamon
- 3/4 tsp baking powder
- 1/2 tsp baking soda / bicarb
- Put the butter into a microwave safe glass dish or bowl, litre sized, and heat on high until melted, 30 seconds or so
- Mix the milk, sugar and mashed bananas into the melted butter, then mix in the flour, cinnamon, baking powder and soda
- Heat on high for 8 - 10 minutes or until risen and cooked right through.
- It'll pull away from the sides of the bowl when done
- Serve immediately with custard, ice cream or caramel sauce
