Potatoes Sauteed With Lemon and Parsley

  1. Cook potatoes in a large saucepan of boiling salted water until barely tender, 6-8 minutes.
  2. Drain.
  3. In a large skillet, heat oil over medium-high heat.
  4. Add potatoes and cook until soft and lightly browned, 7-8 minutes.
  5. Stir in parsley, lemon juice, zest and season with salt and pepper.
