Weight Watchers Corn Muffins Recipe
- 1 c. less 1 tbsp. flour
- 1 c. less 2 tbsp. cornmeal
- 2 tbsp. sugar
- 1 tbsp. plus 1 teaspoon double-acting baking pwdr
- 1 teaspoon salt
- 1 c. skim lowfat milk
- 1/4 c. diet butter
- 1 egg, beaten
- Combine flour, cornmeal, sugar, baking pwdr and sugar.
- In separate bowl combine remaining ingredients.
- Add in to dry mix.
- Spray muffin pan (12 c.) with Pam and fill 2/3 full.
- Bake 15-20 min at 425 degrees.
- Makes 12.
- (1 muffin = 1 B 1/2 Fa 25 O.C.)
