Slow-Cooked Country Green Beans

  1. Add the oil in a medium, heavy saucepan.
  2. Add the onion and saute until tender, about 3 minutes.
  3. Season with salt, pepper, and cayenne.
  4. Add the ham hocks, garlic, and beans.
  5. Add enough water to almost completely cover the beans.
  6. Bring to a boil, reduce the heat and simmer for 2 hours.
  7. Remove from the heat and serve with the cooking liquid.
