Chocolate Chip Cookies for Passover

  1. Preheat oven to 350F.
  2. Stir together matzo meal, farfel, sugars, and salt.
  3. Whisk together eggs, oil, and vanilla in a small bowl.
  4. Stir egg mixture into sugar mixture.
  5. Stir in chocolate chips and nuts.
  6. Roll dough into 1 3/4-inch balls; space 2 inches apart on parchment paperlined baking sheets.
  7. Bake until golden, 16 to 18 minutes, rotating sheets halfway through.
  8. Let cool on sheets on wire racks.
  9. Cookies can be stored in an airtight container at room temperature up to 3 days.
