Chipotle Braised Short Ribs

  1. Cook ribs in 2 Tbsp.
  2. of the dressing in large skillet on medium-high heat 4 min.
  3. on each side or until browned on both sides, working in batches if necessary.
  4. Remove ribs from skillet; cover to keep warm.
  5. Add remaining 2 Tbsp.
  6. dressing and the onions to skillet; cook and stir on medium heat 7 min.
  7. or until onions are tender.
  8. Add tomatoes with their liquid, the chiles, peppers and ribs.
  9. Bring to boil.
  10. Reduce heat to low; cover.
  11. Simmer 1 hour 30 min.
  12. or until ribs are tender.
  13. Remove ribs from sauce.
  14. Skim off any grease from sauce.
  15. Cut rib meat from the bones.
  16. Sprinkle sauce with chopped cilantro and peanuts; serve with the rib meat.
