Snow Balls (Lamington copy)

• 40 g butter
• 4 tablespoons caster sugar
• 12 egg
• 1 cup self-rising flour
• 120 ml milk
• 1 teaspoon vanilla essence
• 13 cup icing sugar
• 1 tablespoon cocoa
• 12 cup desiccated coconut

1. Heat oven to 350.
2. Grease shallow muffin tray.
3. cream butter and sugar.
4. add vanilla.
5. add egg.
6. add flour and milk alternatively.
7. place in shallow muffin tray and bake 20-25 minutes until golden.
8. let cool.
9. mix icing sugar and cocoa and add enough water to make paste.
10. dip cakes completely in icing and cover in coconut.
