Chocolate Banana Cake
- 160 ml milk
- 2 teaspoons lemon juice
- 150 g butter, softened
- 220 g caster sugar
- 2 eggs
- 300 g self raising flour
- 12 teaspoon baking soda
- 1 cup mashed banana
- 100 g dark chocolate, grated finely
- 100 g dark chocolate
- 80 g icing sugar
- 60 g yoghurt
- Preheat oven to 170 D. Celcius.
- Grease deep 22cm round cake pan,.
- lined with paper.
- Combine milk and juice in a small jug, stand for 5 minutes.
- Beat butter and sugar in a small bowl with electric mixer until light and fluffy.
- Beat in eggs, one at a time, until just combined.
- Transfer to a large bowl.
- Stir in sifted flour + soda, banana, milk mixture and chocolate.
- Spread mixture into pan; bake for about 1 hour and 10 minutes.
- Stand cake for 5 minutes, top-side up, onto a wire rack to cool.
- Cream Cheese Frosting:.
- Melt chocolate in a pot over a medium saucepan of simmering water.
- Gradually stir in icing sugar and yoghurt.
