Spiced Couscous Salad

  1. Saute onion until translucent, do not brown.
  2. Add spices and cook for a further minute or until fragrant.
  3. Add chicken stock, bring to boil, reduce heat to simmer.
  4. Add whole chicken fillets and poach for 8-10 minutes or until cooked through.
  5. Remove and slice into thin strips.
  6. Add chickpeas, capsicum, zucchini and cous cous.
  7. Cook for 2 minutes.
  8. Turn off heat, loosen with a fork and allow to stand covered for 10 minutes until cous cous is tender and plump.
  9. Stir in chicken strips and vinaigrette, serve.
