Spiced Couscous Salad
- 1 onion, sliced King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 teaspoon cardamom pods, bruised
- 2 teaspoons cumin
- 1 teaspoon ground coriander
- 2 cups chicken stock
- 2 skinless chicken fillets
- 425g can chickpeas (garbanzo beans), drained
- 1 red capsicum, diced
- 1 zucchini, diced
- 1 1/2 cups couscous
- 1/3 cup KRAFT French Dressing
- Saute onion until translucent, do not brown.
- Add spices and cook for a further minute or until fragrant.
- Add chicken stock, bring to boil, reduce heat to simmer.
- Add whole chicken fillets and poach for 8-10 minutes or until cooked through.
- Remove and slice into thin strips.
- Add chickpeas, capsicum, zucchini and cous cous.
- Cook for 2 minutes.
- Turn off heat, loosen with a fork and allow to stand covered for 10 minutes until cous cous is tender and plump.
- Stir in chicken strips and vinaigrette, serve.
