Captain Kofi's Candlelight Catfish

  1. Clean the fish, leaving bone in.
  2. Drizzle the fish with lemon juice and olive oil.
  3. Scatter the rub over the fish and sprinkle with soy sauce.
  4. Let marinate, covered, overnight in the refrigerator.
  5. Preheat the grill to medium.
  6. Arrange the fish on the grill and cover with foil.
  7. Grill for 15 minutes.
  8. Using a broad spatula, carefully turn the fish over and continue to grill, covered, for 20 to 30 minutes.
  9. Transfer the fish to a serving platter and serve.
