Grilled Chicken, Veg & Haloumi Fettuccine
- 350g dried fettuccine
- olive oil spray
- 400g chicken tenderloins Whole Foods 1 lb For $3.99 thru 02/09
- 2 small zucchini, thinly sliced diagonally
- 1 yellow capsicum, sliced
- 180g Haloumi cheese cheese, cut into 1cm thick slices
- 1/2 cup thick Italian tomato cooking sauce King Sooper's 1 lb For $0.99 thru 02/09
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1/4 cup roughly chopped fresh basil
- Cook fettuccine in a large saucepan of boiling water according to pack instructions.
- Drain.
- Spray a grill pan with oil and heat over medium-high heat.
- Cook chicken for 3-4 minutes each side until cooked.
- Remove, cover and allow to rest.
- Cook the zucchini and capsicum for 2-3 minutes each side, until tender, remove.
- Cook haloumi for 1-2 minutes each side, remove, then crumble into pieces.
- Return pasta to saucepan along with tomato cooking sauce, oil and lemon juice.
- Stir over low heat to heat through.
- Slice chicken and stir into pasta along with vegetables, haloumi and basil, serve.
