Double Cranberry Bread
- 1-3/4 cups flour
- 1 cup sugar
- 1 Tbsp. CALUMET Baking Powder
- 2 cups whole grain cereal flakes with cranberries and almonds
- 1 cup milk
- 1 egg
- 1/3 cup orange juice
- 2 Tbsp. oil
- 1 cup cranberries, coarsely chopped
- Mix flour, sugar and baking powder in large bowl.
- Mix cereal and milk in medium bowl; let stand 3 minutes.
- Add egg, orange juice and oil; mix well.
- Add to flour mixture; stir just until moistened.
- (Batter will be lumpy.)
- Gently stir in cranberries.
- Pour into greased 9x5-inch loaf pan.
- Bake at 375F for 50 minutes to 1 hour or until toothpick inserted in center comes out clean.
- Cool 10 minutes.
- Remove from pan.
- Cool completely on wire rack.
