Pocket Drumsticks

  1. Preheat oven to 400F.
  2. Combine mushrooms, carrots, red peppers and cheese.
  3. Pull away the skin from each drumstick to form a pocket.
  4. Spoon the mushroom mixture evenly into pockets.
  5. Secure with toothpicks.
  6. Coat chicken with coating mix as directed on package.
  7. Place in single layer on foil-covered baking sheet.
  8. Bake 40 minutes or until chicken is cooked through.
  9. Remove and discard toothpicks.
