Pocket Drumsticks
- 4 medium mushrooms, finely chopped
- 1 medium carrot, shredded Target 2 lb For $3.00 thru 02/06
- 1/2 of a medium red pepper, chopped
- 1/2 cup KRAFT Shredded Cheddar & Monterey Jack Cheeses
- 8 chicken drumsticks (1-1/2 lb.) Whole Foods 1 lb For $3.99 thru 02/09
- 1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
- Preheat oven to 400F.
- Combine mushrooms, carrots, red peppers and cheese.
- Pull away the skin from each drumstick to form a pocket.
- Spoon the mushroom mixture evenly into pockets.
- Secure with toothpicks.
- Coat chicken with coating mix as directed on package.
- Place in single layer on foil-covered baking sheet.
- Bake 40 minutes or until chicken is cooked through.
- Remove and discard toothpicks.
