Golden Butternut Squash Pie

  1. Preheat oven to 350.
  2. In a large bowl, combine the eggs, squash, buttermilk, butter and vanilla.
  3. Beat until smooth.
  4. In a small bowl, combine the sugar, flour, salt and baking soda.
  5. Add the dry ingredients to the squash mixture and mix until smooth.
  6. Pour into the pie shells.
  7. Cover the edges of the crust loosely with foil.
  8. Bake for 35 minutes.
  9. Remove the foil and bake for an additional 25 minutes.
  10. Cool on a wire rack.
  11. Store in the refrigerator.
