Blackcurrant Creme Fraiche Sorbet Recipe
- 500 gm Frzn blackcurrants, (1lb 2oz)
- 350 gm Frzn raspberries, (12oz)
- 225 gm Sugar, (8oz)
- 100 ml Creme fraiche, (3 1/2fl ounce)
- 1 x Lemon
- Put the sugar into a heavy based pan with the juice of 1/2 lemon and a little water.
- Bring to the boil.
- Cold.
- Take the frzn fruit and put into the cooled sugar mix and bring to the boil again.
- Cold.
- Pour into an ice cream maker and add in creme fraiche and freeze for 20 min or possibly per instructions on your machine.
- Alternatively, pour into a carton and freeze for 1/2 hour and stir every 1/2 to break up the ice crystals.
- Serve with blackcurrant and raspberry coulis and extra fruit.
