Shrimp Burgers
- 1 lb. uncooked shrimp
- 2 tbsp. scallions chopped
- 3 tbsp. diced celery
- 2 tbsp. chopped parsley
- 1-1/2 tsp. lemon zest minced
- 3 tbsp. mayonnaise
- 1 cup dried cornbread crumbs (or bread crumbs)
- 1 egg beaten
- Salt & Pepper to taste
- Hot sauce to taste
- 1 tbsp. peanut oil

- Cook & peel shrimp and chop (I put Old Bay Seasonig in water) 2.
- In a large bowl mix the shrimp with scallions, parsley, and the lemon zest.
- Stir in mayonnaise, cornbread crumbs and the beaten egg and beat with a wisk or wodden spoon until blended evenly.
- Season with Salt & Pepper and Hot Sauce 3.
- From into 4 patties and saute in peanut oil until both sides are browned.
- Drain on paper towel.
- Serve on hamburger buns or choice of bread with lettuce, tomato and tartar sauce.
