Green Tea Somen

  1. Prepare sauce by coming all of the ingredients and bringing it to boil in a saucepan over medium-high heat.
  2. Remove from heat and let it cool to room temperature.
  3. Once cooled, strain into a clean container.
  4. Prepare noodles according to package directions.
  5. (Note: real noodles do not require the addition of salt).
  6. Rinse with cold water; drain.
  7. Coat noodles with vegetable or canola oil.
  8. Transfer noodles to a zaru (bamboo basket) or individual bowls/plates.
  9. Garnish with green onions, sesame seeds, and zest.
