Smoked Pears Served With Walnut & Butter Sauce
- 1 pear
- 1 lemon
- 2 tbsp brown sugar
- 1/4 tsp ground cinnamon
- 1/8 tsp ground coriander
- 1/8 tsp salt
- 1 pinch ground clove
- 1/2 cup walnuts (crushed)
- 4 tbsp butter
- 1/4 tsp vanilla extract
- Mixed spice brown sugar and set aside.
- Set up your grill for Indirect Heat.
- 350FA
- Sliced pears in half and then cut out the seeds.
- Sprinkle with a little salt and splash on a little lemon juice.
- Add about 2 teaspoon of the spiced brown sugar to each pair
- Place the pears cut side up on the grill over the drip pan.
- Add a small handful of wet fruit wood chips.
- Cook @ about 300AF
- Total cooking time about 30 or 40 minutes, or until the pears are tender.
- To make the walnuts and butter: melt 4 tablespoons of butter over medium heat and cook a minute or two.
- Then add the crushed walnuts and cook for 2 or 3 minutes.
- Add the remaining spice brown sugar and cook for 1 minute.
- Remove from the heat and add vanilla extract.
