Spinach Tortellini Soup

  1. in stock pot, heat olive oil and saute minced garlic.
  2. Add the two cans of chicken broth and undrained tomatoes.
  3. Bring to slight boil.
  4. Add tortellini and cook until they puff up (and they will).
  5. Add the spinach and heat until hot.
  6. **Leftover soup WILL suck up the liquids.
  7. Either add a bit more broth or a bit of water.
