Oven Roasted Chicken and Potatoes
- 4 Chicken pieces (any kind you want)
- 2 medium Potates
- 1 Minced Garlic (to taste)
- 1 Minced Onion (to taste)
- 1 Salt (to taste)
- 1 Pepper (to taste)
- 1 Oil
- Preheat oven to 350F
- Clean and dice potatoes about 1in in size.
- Add to large bowl and pour small amount of oil on top.
- Enough to coat.
- Toss to coat potatoes, then add garlic, onions, salt and pepper.
- Then toss again.
- Add to 9x13 baking dish.
- Repeat with chicken and add to baking dish.
- Arrange potatoes around chicken.
- Bake uncovered for 1 hour or until skin is crispy and potatoes are tender.
