Vegetarian Flat Bread Pizza
- 2 whole Wheat Flat Bread
- 2 Tablespoons Olive Oil
- 1 cup Shredded Swiss Cheese
- 12 slices Goat Cheese (6 On Each Flat Bread)
- 1 whole Zucchini, Cut In Half And Sliced Into Bite Sized Pieces
- 1/2 bunches Asparagus, Tough Ends Removed And Chopped Into Bite-Sized Pieces
- 1 cup Mushrooms, Sliced
- 2 whole Green Onion (scallions), Chopped
- 1/2 cups Eggplant, Chopped
- 1 cup Stuffed Manzanilla Olives, Chopped
- 1/2 cups Spinach
- Warm the oven to 400F degree .
- Drizzle some olive oil onto the flat bread.
- Shred the Swiss cheese, put some on the flat bread (reserve plenty for the top).
- Spread dabs of the goat cheese onto the pizza, be as generous as youd like.
- Then add the zucchini, asparagus, mushrooms, scallions, and chopped small pieces of eggplant to the flat bread.
- Then add the chopped manzanilla olives on top, be generous!
- Theyre delicious!
- Add MORE shredded Swiss cheese on top!
- (be as generous with the cheese as you feel!)
- Plop the flat bread pizzas into the oven (carefully of course).
- I once almost burned my eyebrows off, opening the oven too quickly and practically shoving my head in there with too much excitement.
- Sometimes I am too quick for my own good.
- Anyways!
- Leave the pizza in there for about 10 to 15 minutes, depending on how crunchy you like it.
- Also, I turned on my broiler for a couple minutes at the end, for the top to crisp a bit.
- While the pizza was baking.
- I made a quick butter lettuce and radish salad.
- With some shredded garlic, lemon juice, and little bit of vinegar.
- Yum.
