Vegetarian Flat Bread Pizza

  1. Warm the oven to 400F degree .
  2. Drizzle some olive oil onto the flat bread.
  3. Shred the Swiss cheese, put some on the flat bread (reserve plenty for the top).
  4. Spread dabs of the goat cheese onto the pizza, be as generous as youd like.
  5. Then add the zucchini, asparagus, mushrooms, scallions, and chopped small pieces of eggplant to the flat bread.
  6. Then add the chopped manzanilla olives on top, be generous!
  7. Theyre delicious!
  8. Add MORE shredded Swiss cheese on top!
  9. (be as generous with the cheese as you feel!)
  10. Plop the flat bread pizzas into the oven (carefully of course).
  11. I once almost burned my eyebrows off, opening the oven too quickly and practically shoving my head in there with too much excitement.
  12. Sometimes I am too quick for my own good.
  13. Anyways!
  14. Leave the pizza in there for about 10 to 15 minutes, depending on how crunchy you like it.
  15. Also, I turned on my broiler for a couple minutes at the end, for the top to crisp a bit.
  16. While the pizza was baking.
  17. I made a quick butter lettuce and radish salad.
  18. With some shredded garlic, lemon juice, and little bit of vinegar.
  19. Yum.
