Coriander & Lemon Pork Chops
- 2 pork chops (rib eye chops shown)
- 1 lemon; zested and juiced
- 2 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground mace
- 1/2 tsp ground cardamom
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1/3 tsp ground white pepper
- 1 pinch kosher salt
- 1 vegetable oil; as needed
- Crank the heat on a small non-stick saute pan.
- Combine spices except lemon zest and salt in a bowl.
- Put all spices into the pan and toss constantly until spices are fragrant.
- Do not burn spices.
- Cover chops with enough oil to coat.
- Season.
- Bake at 350 until pork reaches desired doneness.
- Garnish with lemon zest.
