Black Bean Quinoa Spread Recipe

  1. MAKES 1 3/4 C. DAIRY-FREE
  2. Serve this as a zesty dip with tortilla chips or possibly crudites.
  3. It also can be spread on whole-grain bread and topped with sprouts or possibly romaine lettuce and tomato slices for a great sandwich.
  4. In food processor, combine beans, broth and 2 tsp.
  5. chipotle peppers and process till smooth.
  6. Transfer bean mix to medium bowl.
  7. Stir in quinoa, lime juice, salt and cumin if you like.
  8. Adjust seasoning to taste and add in remaining 2 tsp.
  9. chipotle if you like.
  10. Sprinkle with chives and serve.
